My Aerospace Sport has 27x1 1/4" tyres. They measure 1" wide, and high, from the rim. They come straight up of the rim too. I would prefer 1", and am worried if I order new 1 1/4" they will look too balloon. What does everyone else fit? Ta, Nick.

I think I have 27x 1 1/4 on my Sport..they look in keeping with the bike.
But having said that, I have 27x3/4" on my 600ex and they look bloody amazing. When I took it on to the train to the last big rally a few summers' back, I got 3 people talk to me about the bike (and that was just when I was crossing Birmingham to get the connecting train.
And when you compare these to 27 x11/4, the bigger ones look kind of 'big' - not sure what the lowest your rims could take though?

The rims are 1". I have some 28's on another bike and they look huge. I'm wondering if over the last 40 years the tyres have shrunk/contracted?

Definitely has to be gum wall! The rim is 23.5mm I think a good compromise would be 1 1/8". Will have a look, thanks.

I would recommend the 27x1-1/8" Pararacer Pasela gumwalls. I have used them on many 70's vintage road bikes. They are fairly lightweight, reasonably priced, generally easy to mount, and have a nice vintage-looking gum wall and tread pattern. I generally get over 3000 miles on a set and could probably get 5000 but I usually suffer a catastrophic flat involving a cut casing by that time. The 27x1-1/8" size measures 26.6mm wide and 26.0mm high when inflated to the recommended 105 psi. I have also tried the 27x1-1/4" size on a couple of bikes but had trouble with brake and stay clearances, and they look and act a little too beefy for my riding style, which is a mixture of paved roads, paved bike paths, and hard packed bike paths. I think everyone must have dusted off their vintage bikes during this lockdown as gum wall tyres seem to be suddenly a bit thin on the ground.
Anyone like the look of white walls? I think they look great on the right colour scheme vintage bike.

Technically, a 27x1" tyre should measure 1" at its widest point when inflated to the recommended pressure on a recommended rim, but rim consistency, and tyre manufacurer's interpretation, seems to vary ... both from brand to brand, and from decade to decade.
The key thing to ensure is you stay within ETRTO recommended limits for your rim's inner width. Assuming your 23.5mm OD measurement, and allowing ~6mm for wall thickness, your ID will be ~18mm, so should be safe for 25 - 35mm tyres. i.e., a 27x1" up to 27x1 1/4" should be fine.
I've been looking for 27x1" slick gumwalls for a while ... in the UK the Pasela is the nearest (it has sipes) but it's not all that cheap ... you can get them from SJS and Fawkes. Beware, there is a folding version, and a wire-bead version (heavier). If you have straight sided rims rather than crochet (hooked), you probably should use the wire bead, and avoid very high presures (70psi should be fine).
Unfortunately I've had problems with a certain online seller, who delivered used parts claiming they were new. I wouldn't suggest accepting "used" for perishable parts like tyres, unless you have a very sharp eye to check them, and a robust return warranty if you find problems.
I've found a good supply of 27x7/8" tyres, but they're too narrow for you. I agree with the recommendation above ... 27x1 1/8".

Just been out on the new tyres from SJS, they roll nicely and were a breeze to fit. The gum wall is quite consistent as well, I notice on some cheap tyres it goes out of line and gives the impression the wheel is out of true.
